Turkish coffee is a method of preparing coffee. Roasted and then finely ground coffee beans are boiled in a pot (cezve), usually with sugar, and served in a cup where the grounds are allowed to settle. This method of serving coffee is found in the Middle East, North Africa, the Caucasus, and the Balkans.
For an absolutely authentic experience, you should grind the beans in a Kahve Degirmeni, which is a Turkish coffee grinder. This device grinds the beans much finer than other conventional grinders.
Now that you’ve got everything handy, you’re all ready to start. Pour as much cold water as you need in the Cezve and to this add ground Turkish coffee powder and stir well. The ratio is 1 teaspoon ground coffee to 1 cup coffee. Turkish coffee is always prepared using cold water.
If you like your brew sweet, now is the time to add the sugar.
When the coffee starts boiling and forms froth on top, pour it equally between the cups filling each cup only about 1/4th or 1/3rd of the way. With Turkish coffee, the best part is the foam that forms on top, without with the coffee tastes flat. By pouring it equally, everybody around gets a fair share.
Turkish coffee is taken at extremely hot temperatures and is usually served with a glass of cold water to freshen the mouth to better taste the coffee. It is traditionally served with Turkish delight. In the Mediterranean and southeastern Turkey, pistachio grains (kakuli/menengiç) may be added into the coffee. All of the coffee in the pot is poured into cups, but not all of it is drunk. The thick layer of sludgy grounds at the bottom of the cup is left behind.
